Abstract:
The overall goal of this dissertation is to understand interactions among consumer
food demand, health, and retail competition. The decision of consuming unhealthy
foods has long interested health and food policy researchers to study effective ways to
improve dietary choice. The first two chapters investigate the potential food addictive
behaviors and the impact of regulations aiming to reduce unhealthy food choices.
The firm's strategy also interacts closely with consumer behavior. The third chapter
studies private label competition and its role in retailer bargaining power, which has
an important implication for retail competition in the food sector.
